Vegetarian Broth No. 1 by CETTINA VICENZINO
INGREDIENTS FOR 4 PERSONS
For 1 liter of broth
1 1⁄2 tbsp TOMAMI Würzsauce (TOMAMI Seasoning Sauce/buy here )
20 g parmesan rind
10 g organic lemon peel, peeled off in one piece without white pith (not grated)
1 stalk of marjoram, or parsley stalks or basil leaves as desired
Sea-salt
Freshly ground black pepper
INSTRUCTIONS
Add 1 liter of water to a saucepan with the parmesan rind, lemon peel and the TOMAMI Seasoning Sauce and leave to simmer for about 15 minutes. Season with salt and pepper just before the end of boiling.
Strain the broth and serve immediately or use in another dish.
