To which types is TOMAMI suited?

In fact, almost any dish, even desserts and cocktails! How come? TOMAMI gives dishes an intensive, full-flavoured aroma, yet remains in the background taste-wise. The tomato and its glutamic acid content in particular possess the wonderful attribute of enhancing the natural flavour of foods. Why not just give it a try!

Why would I need to use it, as I previously managed without TOMAMI?

That’s the way it is with some good things in life – they are just waiting to be discovered!

Many of our customers wonder how they managed without TOMAMI for so long, because it provides entirely new, more intensive taste sensations. Many people now regard it as an essential ingredient in their cuisine. Why not just try it out yourself!


How do I measure out the right quantity of TOMAMI?

Add a small quantity, taste, add a bit more, taste again… Be it a drop, a dash or more – you decide how intensive the interplay of sweet and sour is on your palate. So just be bold and give it a try!


What is the difference between the “TOMAMI #1” and “TOMAMI #2” versions?

Seasoning version “#2” has a wonderfully tomatoey taste with some acidity and gives dishes that typically tomato character! The inherent flavour of seasoning version “#1” (umami = Japanese for meaty, savoury, intensive) remains in the background and this product adds zest and depth of flavour at mild acidity and subtle sweetness.

Both versions have a pure tomato content. No salt, additives or preservatives!


What is TOMAMI made from?

From fully ripe tomatoes and nothing else. The juice is extracted from the tomatoes using a specially developed production process, while solids and cellulose content are filtered out. Our two seasoning versions, TOMAMI #1 and TOMAMI #2, are obtained by means of different centrifugation processes and gentle heating. And they are so concentrated, which means that a 240 ml bottle contains 4 kg of tomatoes!

Just tomatoes and nothing else – that’s a promise!


Where do the tomatoes used to make TOMAMI come from?

The tomatoes for TOMAMI are grown by our longstanding partners in California (TOMAMI #1) and Israel (TOMAMI #2) and processed into our seasonings in multiple stages – as in winemaking. The tomatoes used are proprietary varieties, which are particularly rich in lycopene.

Finally, everthing is gently heated once again in Germany and then bottled.


Does TOMAMI contain additives?

TOMAMI #1 and #2 contain nothing but tomatoes: no additives or preservatives, no spices. 100 % tomato, 100 % natural, 100 % vegan!


Do I still need to use salt when I use TOMAMI?

At any rate less than usual! A key factor, especially for people who should or want to consume less salt for health reasons.


How do I store TOMAMI?

At room temperature before opening; once opened, you are best off storing your bottle of TOMAMI in the refrigerator.


What shelf life do TOMAMI products have?

if unopened, our TOMAMI seasonings have a shelf life of up to 18 months – from the date of production.

Once opened, you are best off storing TOMAMI in the refrigerator and consuming within approx. 6 months.


What’s the difference between TOMAMI and tomato paste?

Tomato paste is exactly that – a paste, which always adds that typically tomatoey flavour to food. It is made from tomato purée and does not have the same concentrated flavouring characteristics as TOMAMI. Tomato paste is good for thickening sauces, for example, and needs to be browned.

TOMAMI is made from high-quality tomato juice and provides extremely concentrated flavouring. As it is liquid, it can be measured out in very precise quantities and mixed in perfectly to any dish, even cocktails. TOMAMI intensifies the inherent flavour of any dish but does not overpower it.

Our most popular bottle for the catering trade is the 740 ml version. TOMAMI is of course also available in 90 ml and 240 ml bottles.

So many products – what’s the difference?

TOMAMI #1 has a fruity-sweet flavour an a slightly higher natural sugar content as well. When compared directly with TOMAMI #2, it is milder and not as tomatoey.

We like to call it our all-rounder, because it dovetails with and complements most food, as well as enhances and rounds off overall flavour.

TOMAMI #2 has the same flavour-enhancing properties and has a full-bodied flavour and pronounced acidity. It is therefore particularly suitable for sauces, casseroles and stews.

It is also a matter of personal preference. That is because both TOMAMIs can be used in any type of dish, depending on whether you prefer a slightly fruitier flavour or somewhat more pronounced acidity.

Our Toscana, Japan, Hot India and Vegami seasoning sauces do differ from one another. They are all based on TOMAMI #1 and have only had different seasoning mixes added – no other additives are used. However, these are concentrates, so 1-2 tablespoons per serving usually does the trick.

TOMAMI #1 is an important ingredient in our hot sauces too. These seasoning sauces not only provide a hot tanginess but also depth of flavour.

The large quantity of tomatoes used combined with TOMAMI #1 for that exceptional taste sensation give our TOMAMI Ketchup plenty of appeal!
