TOMAMI AND SMOKED HERRING SALAD
INGREDIENTS FOR 4 PERSONS
8 smoked herring fillets
3 tbsp. TOMAMI # 1 (buy here (https://tomami.eu/produkte/2/tomami-1/))
5 tbsp. white wine vinegar
Pickled honey gherkins in a jar
5 tbsp. olive oil
1 red onion
2-3 sticks of celery with green
2 tbsp. olive oil
2 sprigs dill
Grated horseradish from a jar to taste
INSTRUCTIONS
Rinse the herring fillets under cold water, pat dry with kitchen paper and put into a flat
bowl. For the vinaigrette mix TOMAMI # 1 with the vinegar, 2 tbsp. honey gherkin pickling brine and olive oil. Finely chop the honey gherkins and add.
Cut the onion into fine slices and add to the vinaigrette. Cut the celery into diagonal strips as finely as possible, chop the celery green, add both to the vinaigrette. Cover the herrings with the vinaigrette and chill until serving.
Before serving, pluck the dill and add to the herrings together with the grated horseradish.
Tip:
Works well with Bismarck herring fillets, but then reduce the vinegar to 3 tbsp.
Serving suggestion : Eat with hot jacket potatoes or buttered black bread .
