
Ingredients for 4 persons
- 4 chicken legs
- a BBQ rub of your choice
For the infusion:
- 50 ml TOMAMI No.1 🛒
- 2 tbsp TOMAMI Ketchup 🛒
- 1 tbsp TOMAMI Würzstoff 🛒
- 1 wood chunk hickory wood for smoking
Tomato bruschetta:
- 250 g small tomatoes, finely chopped
- Chives, finely chopped
- 1 tbsp TOMAMI No.2 🛒
- 1 tsp TOMAMI Würzstoff 🛒
- salt and pepper
- 50 g melted butter
- 50 g BBQ sauce
Preparation
Divide the chicken legs at the joint.
Mix the ingredients of the infusion and draw up into an infusion syringe. Inject the infusion under the skin of the chicken pieces.
Season the chicken pieces with the rub, place in the grill and smoke with the wood in the embers at 120 °C for ca. 25 minutes.
Take the chicken legs out and mix with the butter and BBQ sauce.
Mix together the bruschetta ingredients and pour over the chicken.
