SMOKED CHICKEN WITH AN INFUSION OF TOMAMI
INGREDIENTS FOR 4 PERSONS
4 chicken legs
A BBQ rub of your choice
For the infusion
50 ml TOMAMI # 1
2 tbsp TOMAMI Ketchup
1 tbsp TOMAMI Seasoning Sauce
1 wood chunk hickory wood for smoking
Tomato bruschetta
250 g small tomatoes, finely chopped
Chives, finely chopped
1 tbsp TOMAMI # 2
1 teaspoon TOMAMI Seasoning Sauce
Salt and pepper
50 g melted butter
50 g BBQ sauce
INSTRUCTIONS
Divide the chicken legs at the joint. Mix the ingredients of the infusion and draw up into an infusion syringe. Inject the infusion under the skin of the chicken pieces. Season the chicken pieces with the rub, place in the grill and smoke with the wood in the embers at 120° C for ca. 25 minutes.
Take the chicken legs out and mix with the butter and BBQ sauce. Mix together the bruschetta ingredients and pour over the chicken.
