ONION SOUP WITH APPLE/ONION/BAYERN TOPPING
INGREDIENTS FOR 4 PERSONS
800 g onions
2 tbsp. TOMAMI Bayern (formerly Vegami)
100 g butter
4 tbsp. flour
220 ml water
100 ml milk
1 apple
1 bunch of chives
Salt and pepper
1 pinch of nutmeg
INSTRUCTIONS
Cut the onions into fine rings (save 1-2 onions for the topping).
Melt the butter and sauté the onion rings. Sprinkle with flour. After about 3 minutes gradually add the water and milk while stirring continuously. Simmer for approx. 10 minutes. Meanwhile finely dice the apple and cut the retained onions into fine rings. Braise in butter and deglaze with TOMAMI Bayern (formerly Vegami). Season the soup with Bayern, salt, pepper and nutmeg. Garnish with the apple/onion/Bayern topping and the finely chopped chives
and serve.
