BAYERN – ONION SAUCE WITH VEGETABLE SKEWERS

INGREDIENTS FOR 4 PERSONS

350 g white onions
3 tablespoons oil
salt
20 g butter
50 ml white wine
90 ml TOMAMI Bayern (formerly Vegami)
1-2 teaspoons spicy mustard
1 each red and yellow pepper
120 g small shiitake mushrooms
1 red onion
1 small zucchini
8 wooden skewers
6 tbsp. olive oil

INSTRUCTIONS

Peel the onions and cut into fine slices. Heat the oil in a pan, add salt to the onions and fry over medium heat until golden brown for 8-10 minutes.
Stir in the butter and deglaze with white wine. Bring to the boil. Add TOMAMI Bayern (formerly Vegami)
and 250 ml water. Cook gently for 5-6 minutes with the lid open until the mixture thickens. Stir in the mustard.

Prepare the skewers by first cutting the peppers into quarters, deseeding them and cutting them into pieces. Cut off the stems from the shiitake mushrooms. Peel the red onion, quarter and pull apart. Cut the zucchini into slices.
Alternate the vegetables on 8 skewers.

Heat the olive oil in a pan and fry the skewers over medium heat for 10 minutes.
Season with salt and serve with the hot onion sauce.

Instead of using wine, you can also prepare the braised onions with the same amount
of apple juice.

Serve with baguette, bread rolls, bread or rice.
