UMAMI BUTTER

INGREDIENTS FOR 4 PERSONS

1/4 medium sized red onion
2 tbsp white wine vinegar
1 1/2 tsp of sugar
1 tsp TOMAMI # 1 (umami) (buy here)
1/4 tsp fenugreek
1/2 tsp coriander seeds
80g butter (at room temperature)
Salt

INSTRUCTIONS

Peel, halve and chop the onions. Mix the sugar, vinegar and TOMAMI in a small bowl and marinate the onions for one hour. Grind the coriander and fenugreek seeds. Drain the marinated onion, mix the onion and ground seasonings with the butter. Season to taste with salt and serve.
