TOSCANA Pasta Salad

INGREDIENTS FOR 4 PERSONS

200 g pasta
10 different coloured cocktail tomatoes
1/2 cucumber
5 mini peppers
1 packet of mini mozzarellas
20 capers
1/2 bunch of parsley
1/2 bunch of basil
2 tbsp. Tomami Toscana
1 small organic lemon
5 tbsp. olive oil
Salt
Pepper

INSTRUCTIONS

Cook the pasta according to the instructions on the packet, drain well in a sieve and allow to cool. Halve the cucumber and peppers and cut into thin slices. Halve or quarter the tomatoes depending on the size.

To make the dressing: mix together Tomami Toscana, lemon juice and grated lemon peel, olive oil, salt and pepper. Finely chop the basil and parsley and add. Pour the dressing over the pasta, vegetables, capers and mini mozzarellas and serve.
