TOMAMI SMOKED BBQ SAUCE

INGREDIENTS FOR 4 PERSONS

250 g TOMAMI Ketchup
Salt
½ clove of garlic
½ onion
1 tbsp. TOMAMI Seasoning Sauce
100 g tomato paste
1 cup of red wine vinegar
½ lemon
1 tbsp. brown sugar
some cinnamon

INSTRUCTIONS

Prepare the grill for smoking and set it at 120°C. Smoke ½ clove of garlic, ½ lemon and ½ onion on the grill using hickory wood for 20 minutes. Remove the peel from the garlic and the onion and chop both. Put into a fireproof saucepan with the remaining ingredients and leave to simmer gently on the grill. Squeeze the lemon and add the lemon juice to the sauce. Simmer for about 20 minutes and
reduce until you obtain BBQ sauce with a creamy consistency. The sauce can used either as a marinade and/or a BBQ sauce (preferably lukewarm).
