TOMAMI BREAD SALAD
INGREDIENTS FOR 4 PERSONS
150 g red grapes
200 g green asparagus
Approx. 100 g baguette / stale bread
1 red pepper
150 g tomatoes
½ cucumber
3 artichoke hearts soaked in oil
1 spring onion
5 tbsp olive oil
Salt + pepper
2 tbsp TOMAMI # 2 (buy here)
1 small splash of lemon juice
1 clove of garlic
Some fresh basil
Edible flowers for decoration (optional)
INSTRUCTIONS
Cut the bread into ½ cm slices and fry on both sides in 2 tablespoons of olive oil until crispy. Wash the vegetables and grapes. Remove the lower, woody part of the asparagus, cut the rest into pieces approx. 2 cm thick and also fry in 1 tablespoon of olive oil. Halve the cucumber lengthways, remove the core and dice the pulp.
Remove the core of the tomatoes, either quarter or halve, depending on the size. Also remove the core of the paprika and finely dice. Halve the grapes, cut the spring onions into fine rings and halve the artichoke hearts. Squeeze the garlic. Mix TOMAMI # 2 with the garlic, a splash of lemon juice, 2 tablespoons of olive oil and 2 pinches of pepper. Add to the remaining ingredients and carefully mix everything together. Serve with a few basil leaves and edible flowers (optional).
