SWEET POTATO SOUP WITH LIME SOUR CREAM
INGREDIENTS FOR 4 PERSONS
3 sweet potatoes (peeled, cut into pieces)
1 onion
2 cloves of garlic
2 cm piece of ginger
2 tablespoons rapeseed oil
1 small chili
2 tbsp. Tomami Toscana
one tub of sour cream
lime and mint for decoration
INSTRUCTIONS
Slice the onion, ginger and garlic into thin slices and fry in rapeseed oil until glassy. Add the sweet potato pieces and the chili. Sauté briefly and add 1.5 liters of hot water; simmer for about 15 minutes. Puree and season with Tomami Toscana and salt. For the topping stir one tablespoon of lime juice into the sour cream, add some lime zest and strips of mint.
