Russian eggs reloaded
INGREDIENTS FOR 4 PERSONS
• 4 organic eggs
• 2 tsp. hot mustard
• fresh rosemary
• fresh thyme
• juice & peel of ½ an organic lime
• 3 tbsp. crème fraîche
• 1 pinch stevia
• 1 tsp. Russian vodka
• 1 tpsp. each Tomami Tomato & Umami
• Maldon Sea salt
• freshly ground pepper
• Texturizer (Basic Texture) as required
• trout caviar
INSTRUCTIONS
Boil eggs in an egg cooker, hold them under cold water and leave to cool off. Peel off the eggshell. Cut the eggs in half and place the egg yolks in a bowl. Cut the herbs very finely and mix with the other ingredients, season and taste. If the mixture is too thin, add some texturiser (Basic Texture). Pour the mixture into a piping bag and fill the egg whites. Finally decorate the eggs with 1 tsp. of trout caviar and serve immediately.
