Orange-Pepper Aioli
INGREDIENTS FOR 4 PERSONS
• 2 egg yolks (room temperature)
• 1 tsp. lemon juice
• 1 tsp. Tomami #1
• 1 knife tip of mustard
• 2 pinches sea salt
• 1 pinch of cane sugar
• 250 ml rapeseed oil
• 2-3 cloves garlic, finely chopped
• 0.5 tsp. „Sieben“ Spice Mix from Ingo Holland
• Rind of an organic orange
INSTRUCTIONS
Whip all the ingredients together (except for the garlic and the oil) with a hand-held blender until creamy. Then add the oil slowly to the running mixer in a fine steady stream. Stir in the garlic as a last step.
