INDIAN GRILLED EGGPLANT SKEWERS
INGREDIENTS FOR 4 PERSONS
(For 8 skewers, preparation either on a grill or in a grill pan)
For the marinade
2 tbsp peanut butter
4 tbsp olive oil
2 tbsp TOMAMI Hot India
The juice of ½ a lime
A pinch each of salt and pepper
1 tbsp maple syrup
½ teaspoon sweet paprika powder
The juice of 1 lime
2 medium sized eggplants
INSTRUCTIONS
Mix together all the ingredients for the marinade. Cut the eggplants into bite-sized cubes. Mix the marinade with the cut eggplants and leave to marinate for at least 45 minutes. Place
onto the skewers and put on the grill or into the grill pan and turn over a few times (when grilling: do not grill directly over the embers). Brush with the leftover marinade several
times. Grill until they turn golden brown. Drizzle with a few more drops of TOMAMI Hot India and a splash of lime juice and serve.
