Coarse mustard vinaigrette with fresh tomato
For 4 Persons
2 tomatoes
50 g TOMAMI Hot India
30 g TOMAMI #2
1 shallot, diced
2 tbsp coarse mustard
1 TL Senf
1 tbsp honey
100 ml Madeira
100 ml vegetable stock
40 ml tomato vinegar
80 ml olive oil
30 ml grape seed oil
Cayenne pepper
Salt and pepper
1 tbsp parsley, finely chopped
method
First reduce the Madeira by half with the diced shallot.
At the same time, skin the tomatoes and cut out the cores. Finely chop the tomato flesh and put with the cores into a mixing bowl.
Add both types of TOMAMI fine mustard, honey, vinegar, salt, pepper and cayenne and blend finely. Finally, mix the fine dressing with the coarse mustard and Madeira reduction.
Add the oils to the dressing and season with a little salt.
Fold in the diced tomatoes and parsley before serving.
