Christmas Red Cabbage with Tomami
INGREDIENTS FOR 4 PERSONS
• 1 onion
• 3 tbsp. oil
• 1 kg red cabbage
• 100 ml apple cider vinegar
• 500 ml apple juice
• 3 bay leaves
• 5 cloves
• 1 cinnamon stick
• 5 juniper berries
• 1 apple
• salt
• pepper
• 2 tbsp. TOMAMI #1 (buy here)
INSTRUCTIONS
Dice the onion and fry in oil until glassy. Slice the red cabbage into thin strips and fry briefly, deglaze with apple cider vinegar and apple juice. Add the bay leaf, clove, cinnamon stick and juniper berries to the cabbage and simmer for about 2 hours. Half an hour before the end of cooking, time add the diced apple. Season with salt, pepper and TOMAMI #1.
