BROTH NO. 2 BY CETTINA VICENZINO
INGREDIENTS FOR 4 PERSONS
For 1 liter of broth
1 ½ tbsp TOMAMI Bayern (formerly Vegami)
1 ½ tbsp TOMAMI No.1
50 g carrots, finely diced
4 sage leaves
1 bay leaf
2 tbsp extra virgin olive oil
1 pinch of sugar
Sea salt
Freshly ground black pepper
INSTRUCTIONS
Heat the olive oil in a saucepan. Roast the carrots together with the sage leaves, sprinkle with a pinch of sugar and deglaze with 1 liter of warm water. Stir in the TOMAMI Bayern (formerly Vegami) and TOMAMI No.1, add the bay leaf and simmer uncovered at a low temperature for about 15 minutes. Season to taste with salt and pepper just before the end of cooking.
Remove the bay leaf and, depending on your requirements, strain the broth or serve immediately or use for another dish.
