Black rice with Tomami and chanterelles

INGREDIENTS FOR 4 PERSONS

• 200 g black rice
• 2 shallots
• oil
• finely grated rind of half an organic lemon
• 2 sprigs of thyme
• 1 bay leaf
• 2 tbsp. Tomami Umami
• salt
• pepper
• 2 sprigs of tarragon
• fresh chanterelles
• butter

INSTRUCTIONS

Soak the rice in water overnight. Peel and sauté the shallots. Add the drained rice, thyme and bay leaf and pour in 400 ml water. Cook for approx. 35 mins. Season with Tomami Umami, salt and pepper. Clean the chanterelles and fry briefly in the butter. Season with salt and pepper and serve with the tarragon and rice.
