BASIC BROTH RECIPES and fine soups
INGREDIENTS FOR 4 PERSONS
Fine basic broth recipes for TOMAMI fans; you can add numerous accompaniments, such as royale, chopped pancakes, marrow dumplings, baking peas, small noodles, diced vegetables, fresh or tinned peas, asparagus tips, etc.!
Use TOMAMI No.1 or TOMAMI No.2, according to taste or TOMAMI Bayern (formerly Vegami) as specified in the recipe

INSTRUCTIONS
Basic stock
For a delicious base stock, boil 250 ml of water with approx. 50 ml TOMAMI.
For a tomato broth
Mix approx. 50 ml TOMAMI with 250 ml water and add 4 finely chopped, dried cherry tomatoes. Bring to the boil.
Optional: some fresh garlic, a sprig of fresh rosemary or thyme.
For a mushroom broth
Bring 15 g of dried porcini mushrooms or mixed dried mushrooms to the boil with approx. 50 ml of TOMAMI and 250 ml of water and cover and allow to steep for 10 minutes.
Optional: 1 bay leaf, some fresh garlic and/or thyme; steep to taste.
For an Asia-style broth
Bring 15 g dried shiitake mushrooms with approx. 50 ml TOMAMI and 250 ml water and 4 tablespoons soy sauce to the boil, cover and allow to steep for 10 minutes.
Optional: add fresh garlic, finely grated ginger, chili or chili sauce to taste.
Bayern basic stock
For a basic stock, boil 150 ml of water with approx. 80 ml of TOMAMI Bayern (formerly Vegami).
