Stremel Delight Burger

Ingredients for 4 persons

• Sourdough rye rolls
• a handful of lettuce
• 1 small mango
• 1 small fennel
• 70 g stremel salmon (hot smoked salmon fillet strips)
• 1 box cress

For the avocado cream

• 100 g crème fraîche
• 1 avocado
• lemon juice
• salt, and pepper

For the Tomami sauce

• 2 tablespoons honey
• 2 tablespoons mustard
• 4 tablespoons Tomami
• 1-2 tablespoons ginger, finely chopped

Instructions

Fry bread roll halves in a pan briefly with hot butter, spread the lower half with the avocado cream. Top with lettuce leaves and thin mango slices, then follow with pieces of warm stremel salmon and thinly sliced fennel slices. Finish off with the Tomami dressing and cress.
