Die Bl\u00e4tter waschen und gut mit einem Tuch oder K\u00fcchenkrepp trocknen. Anschlie\u00dfend die Bl\u00e4tter in feine Streifen oder Segel schneiden. In 130 \u00b0C hei\u00dfem Fett hellbraun frittieren und auf einem K\u00fcchenkrepp abtropfen lassen. Direkt salzen und im Ofen bei 80 \u00b0C nachtrocknen und warmhalten.<\/p>\n\n\n\n<p>Den Apfel waschen, in feine W\u00fcrfel schneiden und mit etwas Zitronensaft leicht marinieren.<\/p>\n\n\n\n<p>F\u00fcr die Tomamibr\u00fche Wasser mit <a href=\"?add-to-cart=12335&amp;quantity=1\">TOMAMI No.2 \ud83d\uded2<\/a> einmal aufkochen.<\/p>\n\n\n\n<p>F\u00fcr das Risotto die Schalotte in feine W\u00fcrfel schneiden und in etwas Butter glasig anschwitzen. Den Risotto Reis hinzuf\u00fcgen und glasig mitschwitzen. Mit Salz und wei\u00dfem Pfeffer w\u00fcrzen und anschlie\u00dfend mit dem Wei\u00dfwein abl\u00f6schen und reduzieren.<\/p>\n\n\n\n<p>Sobald fast keine Fl\u00fcssigkeit mehr vorhanden ist mit der Tomamibr\u00fche angie\u00dfen bis der Reis bedeckt ist. Unter stetigem R\u00fchren und schrittweiser Zugabe von Br\u00fche den Reis garen und auf gew\u00fcnschte Konsistenz bringen.<\/p>\n\n\n\n<p>Kurz vor Ende der Garzeit die Blutwurst ohne Darm leicht zerdr\u00fccken und unterr\u00fchren. Zum Schluss mit restlicher Butter und Parmesan binden und nochmals nachschmecken.
